Hi Jasper,
I don't know if there is a preferred choice of monitor but most
monitors that can accept digital TTL levels and sync down to 15kHz
should work with a bit of persuasion.
I managed to get my S-550 to drive an old NEC Multisync3D VGA monitor
by wiring a pair of transistors in the cable to invert the hsync and
vsync signals similar to the way the Roland RGB25i cable worked
(there is a schematic of the RGB25i cable on the S-760 site http://
s760.us.tt/ under accessories->monitors).
I can provide a wiring diagram for my home-made version if you are
interested (or if anyone else is).
This page has a list of monitors for old amiga computers which should
also be compatible with the Digital RGB signal as long as the correct
connecting cable/circuit is used:

P.S. my multisync 3D worked great with the 550 but it recently died
of old age (and dust inhalation by the looks of things) so I'm
currently considering getting one of my 2nd year undergrad students
to design a cheap scan doubler as their project so we could all throw
the old monitors away and plug our samplers into our flat screens
instead...
